Patisserie Claude is a business that makes us all proud to live in the Village. Not only is it one of the most civilized of neighborhood eateries, but the story of its present owner is that of a real hero’s journey.
Founded in 1982 by Monsieur Claude, a French-born baker of impeccable pastries and viennoiserie, it is now owned by his talented former assistant, Pablo Valdey. Pablo began his career as an assistant in a bakery across the street. Monsieur Claude took notice of his skills and work ethic in the rival shop. After a great deal of persuasion, he convinced Pablo to cross the street and work as his apprentice. When Claude retired about 9 years ago, Pablo bought the store and proudly continues the beautiful tradition. He uses the original recipes and still consults with Claude on a regular basis.
When you walk into the little bakery, it is as if you have suddenly been transported to the Rue de la Paix. Regulars line up bright and early to get the day’s first croissants, still warm from the oven, in all of their flaky, buttery perfection. Others while away afternoons over fresh brewed espresso and rich, divinely bitter chocolate mousse. Puffy brioche, creamy éclairs, cakes, pies, and cookies crowd the bakery’s case. The welcome here is warm, the coffee is strong, and the ambiance positively Greenwich Village with a Parisian flavor.
There are very few true, independent patisseries left in NYC. As Pablo pointed out, many places sell salads and sandwiches and other foods, but Patisserie Claude still sells only pastries (sweet and savory) and coffee. Moreover, Patisserie Claude is a local, one of a kind place. We are pleased to honor Patisserie Claude with a 2017 Village Award!
